
Maple-Glazed Pork Chops with Sweet Potato-Bacon Hash

Ingredients
- 1 1/4 lbs sweet potatoes (about 2 large), peeled and cut into 3/4 inch chunks
- 6 slices bacon, chopped fine
- 4 bone-in rib pork chops, aobut 1 inch thick
- salt and pepper
- 2 t minced fresh thyme
- 1/2 c maple syrup
- 2 t Dijon mustard
- 1 T cider vinegar
Instructions
- 1. Place potatoes in large bowl and microwave, covered, until tender, 4 to 7 minutes. Meanwhile, cook bacon in large nonstick skillet over medium-high heat until crisp, about 5 minutes. Using slotted spoon, transfer bacon to paper towel-lined plate. Pour off bacon fat, reserving 2 T.
- 2. Pat chops dry and season w salt and pepper. Heat 1 T reserved bacon fat in skillet over medium-high heat until just smoking. Brown chops, about 4 minutes per side. Transfer to plate and tent with foil.
- 3. Add remaining reserved bacon fat and potatoes to empty pan and cook, turning occasionally, until browned all over, 5 to 7 minutes. Stir in thyme and crisp bacon. Season with salt and pepper. Transfer to serving bowl.
- 4. Add maple syrup, mustard, and vinegar to pan an cook until thickened, about 2 minutes. Add chops and any accumulated juices and simmer, turning often, until glaze coats chops, about 2 minutes. Serve.
