
Green Beans with Lemon and Butter

Ingredients
- Salt
- 1 1/2 lbs green beans, trimmed
- 3 T unsalted butter
- 2 t grated ;e,pm zest
- 1/4 c finely chopped flat-leaf parsley
- Freshly ground black pepper
Instructions
- 1. In a large pot, bring 6 quarts water to a boil over high heat. Add 1 T salt and green beans and cook for about 5 minutes or until just tender. Drain. Transfer to a bowl of ice water and let cool. Drain and pat dry.
- 2. 2. In a large deep skillet, melt butter over medium heat. Add beans and toss to heat through, about 5 minutes. Add lemon zest and toss to coat. Cook for 1 minute. Stir in parsley. Season with salt and pepper to taste.
- 3. *** The green beans can be prepared through step 1 and kept, covered and refrigerated, for up to 1 day.
