
Black Bean and Chorizo Enfrijoladas

Ingredients
- 8 oz chorizo sausage, quartered lengthwise and sliced thin
- 2 (16 oz) cans refried black beans
- 1 1/4 c low-sodium chicken broth
- 2 T lime juice
- 2 garlic cloves, minced
- 1 t chili powder
- salt and pepper
- 12 (6 inch) corn tortillas
- 1 1/2 c shredded pepper Jack cheese
Instructions
- 1. Adjust oven rack to middle position and heat oven to 450 degrees. Cook chorizo in large nonstick skillet over medium-high heat until browned, about 5 minutes.
- 2. Meanwhile, whisk beans, broth, lime juice, garlic, and chili powder in large bowl until combined. Microwave, covered, until heated through, 2 to 4 minutes. Season with salt and pepper.
- 3. Spread 1/2 c bean mixture over bottom of a 13 x 9 inch baking dish. Stack tortillas on plate and microwave, covered, until pliable, about 1 minute. Dip tortillas one at a time in bean mixture in bowl, fold into quarters, and place in prepared dish, overlapping slightly. Pour remaining bean mixture over tortillas and top with chorizo and cheese. Cover with foil and bake until cheese is melted and tortillas are heated, about 12 minutes. Serve.
