
Ingredients
- 8 large eggs
- 1 Tbs olive oil
- 8 oz potatoes
- 1 onion chopped
- 6 oz kielbasa sliced thin
- 1/2 cup shredded cheese
Instructions
- 1. Wisk eggs and add salt and pepper. Set aside
- 2. Heat olive oil. Add potatoes cut into 1/2 inch pieces. Cook covered for 8 minutes.
- 3. Add 1 onion chopped. Cook covered for 5 minutes until potatoes are brown and tender.
- 4. Add kielbasa and cook uncovered for 5 minutes.
- 5. Remove potatoes and cook scrambled eggs.
- 6. Add potatoes to pan with eggs and add cheese. Serve!
