
Garlic Mayonnaise

Ingredients
- 2 large egg yolks
- 2 t Dijon mustard
- 2 t lemon juice
- 1 garlic clove, minced
- 3/4 c vegetable oil
- 1 T water
- 1/2 t salt
- 1/4 t pepper
- 1/4 c extra-virgin olive oil
Instructions
- 1. Process egg yolks, mustard, lemon juice, and garlic in food processor until combined, about 10 seconds. With processor running, slowly drizzle in vegetable oil, about 1 minute. Transfer mixture to medium bowl and whisk in water, salt, and pepper. Whisking constantly, slowly drizzle in olive oil. ( Can be refrigerated for up to 4 days)
