Ingredients
- 12 carrots
- 3 T olive oil
- 1 1/4 t kosher salt
- 1/2 t freshly ground black pepper
- 2 T minced fresh parsley
Instructions
- 1. Preheat the oven to 400 degrees.
- 2. If the carrots are thick, cut them in half lengthwise; if not, leave them whole. Slice the carrots diagonally into 1 1/2 inch thick slices. Place them on a baking sheet in one layer and toss them with the olive oil, salt, and pepper. Roast in the oven for 20 minutes.
- 3. Toss the carrots with minced parsley, season to taste, and serve.
