Skillet Strata with Feta and Spinach

Ingredients
- 6 large eggs
- one and one half cups whole milk
- three quarter cups crumbled feta cheese
- salt and pepper
- 4 tablespoons unsalted butter
- 1 onion chopped fine
- one 6 ounce bag baby spinach chopped
- 5 slices hearty white sandwich bread cut into 1 inch squares do not cut off crusts
Instructions
- 1. adjust oven rack to middle position and heat to 400 degrees whisk eggs milk half of 1 quarter teaspoon salt and one quarter teaspoon pepper in large bowl
- 2. melt 2 tablespoons butter in large oven safe nonstick skillet over medium heat cook onion until just softened about 3 minutes add spinach and one quarter teaspoon salt and cook until wilted about 2 minutes transfer to bowl
- 3. melt remaining butter and empty pen atok add bread and cook stirring frequently until golden brown about 5 minutes of heat stir in egg mixture and spinach mixture until combined top with remaining cheese and bake until surface is golden brown and edges pull away from sides of pan in about 15 minutes serve
