- 2 large ripe tomatores, chopped
- 1 medium cucumber, peeled, seeded and chopped
- 1 small red onion, sliced
- 1/3 c crumbled feta
- chopped parsley, and mint or basil
- olive oil & red wine vinegar
- salt & peppper
