Kielbasa, Potato and Onion Scramble

Instructions

  • 1. Wisk eggs and add salt and pepper. Set aside
  • 2. Heat olive oil. Add potatoes cut into 1/2 inch pieces. Cook covered for 8 minutes.
  • 3. Add 1 onion chopped. Cook covered for 5 minutes until potatoes are brown and tender.
  • 4. Add kielbasa and cook uncovered for 5 minutes.
  • 5. Remove potatoes and cook scrambled eggs.
  • 6. Add potatoes to pan with eggs and add cheese. Serve!
