
Wild Mushroom Stock

Ingredients
- 2 T olive oil
- 1 c chopped onion
- 1/2 c chopped carrot
- 1/2 c chopped celery
- 1 T minced garlic
- 2 c dried wild mushroom blend
- 4 c chicken stock
Instructions
- 1. Heat olive oil in a large stockpot over medium-high heat. Add onion, carrot, celery, and garlic. Cook until vegetables begin to soften, about 4 minutes.
- 2. Add wild mushroom blend and chicken stock; simmer over medium heat for about 15 minutes. Strain stock, discarding solids.
